The Native Enchantement
The white sturgeon, between mystery and delicacy
- Acipenser Transmontanus
Qavjar remains faithful to artisanal practices and preserves the tradition of humility that surrounds the production of its caviar.
The origins of caviar consumption trace back to the Caspian Sea, where fishermen and nobles shared the riches of these waters. The sturgeon, king of the seas, was consumed by the elite, while caviar, considered the least noble part, was reserved for the fishermen.
This humble caviar represented a sober and respectful approach to nature, where pleasure and need converged in a simple and authentic gesture.
